100% Whole Wheat Waffles
adapted from 100daysofrealfood.com
Ingredients:
2 large eggs
1 3/4 cup buttermilk (can use buttermilk, but regular milk is better)
1/4 cup oil or melted butter
1 TB honey
1/4 tsp baking soda
1 1/2 cups ground wheat
2 tsp baking powder
1/4 tsp salt
1/2 tsp ground cinnamon (optional)
2 TB ground flax seed (optional)
1. Preheat your waffle iron.
2. In a large mixing bowl, whisk together eggs, milk, oil, honey, cinnamon, and baking soda until well combined.
3. Add in the flour, baking powder, and salt and whisk together just until the large lumps disappear.
4. When waffle iron is hot, spray with olive oil and paddle some batter onto the center of the iron (with my iron, I use half of the batter at a time). Follow directions from your waffle maker to know how long to cook.
5. Enjoy with your favorite toppings!
