Slow Cooker Sweet Pork

Slow Cooker Sweet Pork
adapted from www.favfamilyrecipes.com

This recipes tastes like the sweet pork from Costa Vida!  We ate it just over rice, but it would taste great in a burrito too.

Ingredients:

2 pounds boneless pork
1 can Coke (not diet)
dash garlic salt
1/4 c. water
1 can diced green chilies
10 oz red enchilada sauce, medium spiciness
1 c. brown sugar

Instructions:

1. Put pork, 1/2 can of coke, water, and garlic salt in crock pot on high for about 3-4 hours or on low for about 8 hours. The pork should shred easily, but don't let the pork get too dry! Remove pork from crock pot and drain any liquid left in the pot.  Shred pork.
2. Return pork to crock pot and add 1/2 can Coke, chilies, enchilada sauce and brown sugar.  Cook on low for 2 hours.
