Slow Cooker Paprika Chicken Stroganoff

Slow Cooker Paprika Chicken Stroganoff

Ingredients:
1 1/4 lb boneless, skinless chicken breasts
1 Tbsp paprika
1/2 tsp salt
1/2 tsp black pepper
2 Tbsp olive oil, divided
1 medium yellow onion, diced
8 oz mushrooms, sliced
2 cloves garlic, finely minced
1 3/4 cups chicken broth
2 Tbsp tomato paste
1 bay leaf
1/4 cup plain nonfat Greek yogurt
1 Tbsp cornstarch, whisked with 1 Tbsp water
10 oz dry wheat egg noodles
Fresh parsley, chopped, for garnish

Directions:
1.  Combine all ingredients except cornstarch, noodles, and parsley in slow cooker.  Cook on low for about 5-6 hours, or until chicken is tender.
2. Remove chicken from slow cooker about 30 minutes before serving and chop into bite-sized pieces or shred and cook an additional 30 minutes.
3. Cook noodles according to package directions.
4. Serve Stroganoff over noodles and garnish with fresh parsley.
