Quick Yeast Dinner Rolls

Quick Yeast Dinner Rolls

These rolls were so light and fluffy!  Recipe makes about 9 rolls.  My dough was quite sticky, but since I baked these in muffin tins, I didn't need to shape it, just spoon it in.  They shape themselves when they rise.

Ingredients:
2 TB butter
3 TB white sugar
1 cup hot water
1 package active dry yeast (or 2 1/4 tsp)
1 egg, beaten
1 tsp salt
2 1/2 cup flour

Directions:
1. Preheat oven to 425 degrees F. Grease muffin tins.
2. In a large bowl, mix the butter, sugar, and hot water.  Allow to cool until lukewarm, and mix in the yeast until dissolved.  Mix in the egg, salt, and flour.  Allow the dough to rise until doubled in size.
3. Divide the dough into the prepared muffin cups, and allow to rise again until doubled in size.
4. Bake for 8-10 minutes in the preheated oven.
